Three show-stopping flavors: Jeju apple mango, tomato, and handcrafted sweet red bean

Westin Westin Seoul Parnas announced on the 14th that it launched its first Signature Bingsu Selection for the summer season. The lineup includes three options—Jeju apple mango bingsu, tomato bingsu, and a handcrafted sweet red bean bingsu—and is presented on tableware from the Danish lifestyle brand Georg Jensen.

The hotel uses its proprietary mascarpone milk ice across all three bingsus. Creamier and richer than standard milk ice, it delivers a velvety texture and a subtle nutty note, with each recipe tuned to balance the toppings.

Notably, Westin Seoul Parnas has teamed up with Danish brand Georg Jensen for its first collaboration in Korea ahead of Georg Jensen’s official domestic launch in June. Georg Jensen bowls, trays, plates, and cutlery are used to link the offering to the lobby lounge, The Log.

The Signature Handmade Sweet Red Bean Bingsu pairs house-made sweet red beans—soaked for more than 48 hours and slow-cooked—with handmade injeolmi rice cakes. The injeolmi is made from a milk-enriched dough so it retains its chew even when served cold. Price: 60,000 KRW (approximately $45).

The Signature Tea Tomato Bingsu features a tea base made by cold-brewing The Log’s signature rooibos tea for eight hours. It’s built with cherry tomatoes marinated in yuzu syrup, a tomato mousse cake, yogurt gelato, and basil sauce. Price: 80,000 KRW (approximately $60).

The Jeju Apple Mango Bingsu uses Jeju-grown apple mangoes with sugar content above 20 Brix. For the premium mango option, it’s topped with about 650 g (roughly 1.4 lb) of mango flesh, plus mango ice cream and mango purée, and is served with house-made red beans. Price: 120,000 KRW (approximately $90).
