Haidilao, the Chinese hotpot chain, is getting everyone talking with its new Bell Pepper Hotpot.
On April 21, Haidilao announced the launch of its new Bell Pepper Hotpot on its official Instagram. Available exclusively at the Myeong-dong location, the dish balances a clean heat with the fresh, bright aroma of bell peppers.

At the heart of the dish is Haidilao’s signature rich broth paired with fresh bell peppers. Rather than the tongue-numbing kick of traditional mala hotpot, this version highlights the peppers’ crisp bite and gentle sweetness for a distinctly different flavor profile.
Online reactions were split. Many netizens called the bell pepper hotpot a culinary oddity, posting comments like “April Fool’s is over,” “It reminds me of scallion-flavored Chex,” “What is this?” and “This will turn someone into Shin-chan who hates bell peppers.”
By breaking hotpot conventions, this new menu item has diners wondering whether it will kick off a fresh dining trend.
