
[Point Economy] The Shilla Seoul’s Chinese restaurant Palsoon is bringing together masters of authentic Chinese cuisine for a limited culinary event.
The Shilla Seoul announced a T'ang Court & Palsoon Culinary Collaboration running April 28–30. The three-day event pairs Palsoon with Hong Kong’s three-Michelin-star T'ang Court at The Langham Hotel to showcase the best of Cantonese cooking.
With interest in Chinese cuisine on the rise, Palsoon sought a celebrated, long-established partner. The hotel invited T'ang Court’s executive chef, Wong Chi Fai, to introduce Hong Kong-style Cantonese flavors to diners in Seoul.
T'ang Court has held three Michelin stars continuously since 2016 (for 10 years), making it Hong Kong’s longest-running three-star Cantonese restaurant.
Renowned for luxurious seafood and classic Cantonese dishes, T'ang Court honors tradition while giving dishes a modern twist. That balance of heritage and contemporary flair has made it a top culinary destination for both local and international food lovers.
The restaurant also drew extra attention after appearing on the travel show Jigu Marble: World Travel 3 last March, becoming a highlighted stop for visitors to Hong Kong.
Chef Wong Chi Fai, who will cook at Palsoon for the collaboration, has worked at T'ang Court for more than 20 years and became executive chef in 2022. He’s celebrated as a master of wok hei—the smoky, charred flavor that comes from high-heat wok cooking—and is recognized for his expertise in traditional Cantonese roasting and stir-fries. Guided by a philosophy that respects each ingredient’s essence, Chef Wong will bring T'ang Court’s artistry and authenticity to this special menu.
Palsoon’s executive chef, Jang Geum-seung, has been with the restaurant for 43 years and has led the kitchen since 2002. He follows a “three lows, one high” approach—low fat, low calories, low cholesterol, and high protein—and is widely regarded in Korea for creating authentic mainland Chinese cuisine without chemical seasonings.
Under Chef Jang’s leadership, Palsoon is listed in La Liste 2026 and has been included among La Liste’s top 1,000 restaurants since 2023.
Across the three-day collaboration, guests will enjoy an eight-course tasting menu that begins with an amuse-bouche from Chef Jang and features T'ang Court signatures such as Crab Shell Roast—crab meat paired with onions and a cream sauce—and Fresh Lobster stir-fried with scallions, red onion, and shallots.
The Crab Shell Roast is a longtime T'ang Court signature: chefs pack a single crab shell with the meat from four to five crabs. The Fresh Lobster stir-fry combines three types of onions with tender lobster, delivering the quintessential wok hei that defines Cantonese cuisine.
