
[Sports Seoul | Reporter Wi Soo-jung] Seoul Shilla Hotel's Chinese restaurant PalSeon is staging a high-profile culinary collaboration, bringing together leading Chinese chefs from Korea and Hong Kong.
On March 10, the hotel announced that from April 28–30 it will present the T'ang Court & PalSeon Culinary Collaboration, partnering with T'ang Court—the three-Michelin-starred restaurant at The Langham, Hong Kong—to showcase Cantonese cuisine.
With interest in Chinese cuisine on the rise, the promotion pairs PalSeon with a long-established Hong Kong institution to introduce authentic Cantonese flavors to Seoul diners.
T'ang Court has held three Michelin stars since 2016, maintaining that distinction for a decade. The restaurant is celebrated worldwide for its high-end seafood and modern reinterpretations of classic Cantonese dishes.
T'ang Court's executive chef, Wong Chi Fai, will fly to Seoul to lead the kitchen. A T'ang Court veteran of more than 20 years and its executive chef since 2022, Wong is famed for his mastery of wok hei—the smoky, high-heat flavor from wok cooking—and is widely respected for his expertise in Cantonese roasting and stir-fries.
PalSeon’s executive chef, Jang Geum-seung, is likewise regarded as one of Korea’s foremost masters of Chinese cuisine. A PalSeon stalwart for 43 years and executive chef since 2002, Jang follows a "three lows, one high" philosophy—low fat, low calories, low cholesterol, high protein—creating health-conscious Chinese dishes without chemical seasonings. PalSeon is listed in the LA LISTE 2026 guide and has been among LA LISTE's Top 1,000 Restaurants since 2023.
Across the three-day event, guests will enjoy an eight-course tasting menu that begins with an amuse-bouche from Chef Jang. Highlights include T'ang Court signatures such as Crab Shell Bake—crab meat packed into the shell and baked with a creamy sauce—and Stir-Fried Fresh Lobster, tossed with scallions, red onion and shallots to showcase wok hei.
